Whoopie Pie's - 25th August 2015
 
 
Hey guy's so this afternoon at work we had a new range of baking books come into the store and I just had to have a read of this one. I will be buying this book next time I am in work but while I was reading thought it I found this recipe I want to share with you today, I will be baking this at some point in the future so maybe you want to give it a try as well and share your results with me. The recipe it below with how to make them.
 
Classic Pies
 
125g Unsalted butter or vegetable shorting, softened
200g Dark soft brown sugar
1 Large egg
1 Teaspoon vanilla extract
280g Self-raising flour
40g Cocoa powder
1 Teaspoon baking powder
1/2 Teaspoon salt
125ml Butter milk
125g Soured cream
100ml Hot (not boiling) water
 
Marshmallow Filing
 
200g Marshmallow fluff
125g Unsalted butter (softened)
200g Icing sugar
1 Teaspoon vanilla extract
50ml Milk
 
Method
 
(Pies)
1. Preheat the oven to 180'C (350'F) Gas 4.
2. Cream together the butter and brown sugar in a mixing bowl for 2-3 minutes using a electric hand mixer, until light and creamy.
3. Add egg and vanilla extract and mix again.
4. Sift in flour, cocoa and baking powder into the bowl and add salt, butter milk and sour cream.
5. Whisk again until everything is incorporated, add hot water and mix again.
6. Put a large spoonful of mixture into each hole in the prepared tins, Then leave to stand for 10 minutes, Then bake in your preheated oven for 10-12 minutes
7.  Remove from oven once baked and let them cool.
 
(Filling)
1. Whisk together marshmallow fluff and butter into a bowl.
2. Sift in icing sugar, Add vanilla extract, Milk and whisk together for 3-5minutes until light and creamy.
3. Spoon filling into a piping bag and pipe a generous swirl of filling on to each pie.
4. Serve up and enjoy.
